Basic Vegetable Fritters
Mix Vegetables for frying - aubergine, sweet potato, carrot, onion, cauliflower, bell pepper, lady’s finger, turnips – Washed, drained and cut appropriately
 
Ingredients
1 cup Palmas/SeriMas for frying
2/3 cup Fresh milk
cup Flour (equal amount of rice flour, corn flour and wheat flour)
1 tsp Falt
1 tsp Baking powder
1 whole Egg
 
Methods
1. Heat oil for deep fat frying.
2. Prepare the batter. Put everything in a blender and blend. Sieve for a smooth batter.
3.
When the oil is hot, deep the vegetables in the batter. Gently slide the vegetable into the oil and fry until the fritters turn mild yellow.
4. Use a slotted spoon to take the cooked fritters out. Drain well on a tissue paper.
 
Coriander Sauce
5 Red Chilli
1 Tomato
2 Garlic
1 inch Ginger
30 ml Lime Juice
Salt & sugar to taste
Coriander Leaf remove stem
Some Water
 
Methods
1. Put everything in a blender and blend. Adjust flavour and consistency. (Plus minus the water content)
